I have been on an elimination diet recently to try and control eczema symptoms(first time experiencing those). And as a result I have cut eggs and dairy out of my diet along with gluten, so maybe I'm more of an unwilling vegan then an accidental vegan.Ingredients
1 cup dates2 bananas
1/2 cup sunflower oil
1 tsp. vanilla
1/4 tsp xanthan gum
1/2 tsp salt
2 tsp. baking powder
1 tsp. baking soda
2 cups corn meal
2 cups flour mix
Flour mix
Equal parts arrowroot, tapioca starch, white rice flour and brown rice flour.Directions
If you don't use the bananas you can substitute with 1/4 cup of brown sugar for sweetness.Soak the dates in enough hot water to cover until softened and then blend all the liquid ingredients together.
Bake at 350 C for about 40-45 mins.
